A sparkling, tea-like pour over that lets a washed Ethiopian sing — citrus up front, jasmine in the middle and a honeyed finish.

Instructions

    Rinse and preheat

    Rinse the filter with hot water and discard. Heat brew water to 94°C.

    Bloom0:00

    Add 18 g coffee, then pour 50 g water. Swirl and wait 45 seconds.

  3. 3

    First pour0:45

    Pour in gentle spirals to 180 g by 1:15.

  4. 4

    Second pour1:30

    Pour to 300 g by 1:45 in the center.

  5. 5

    Swirl and drain1:50

    One gentle swirl. Drawdown should finish around 2:45.
