Introduction

Pour over is the method that teaches you the most about coffee. Every variable is in your hands: the grind, the pour rate, the agitation, the temperature.

This recipe uses a 1:16.7 ratio and three structured pours. It's forgiving enough for a first attempt and precise enough to dial in a competition-grade light roast.

Brewing steps

  1. 1

    Heat and rinse

    Heat water to 94°C. Place the filter in the dripper and rinse thoroughly to remove paper taste and preheat the brewer. Discard the rinse water.

  2. 2

    Grind and level

    Grind 18 g of coffee medium-fine. Add to the filter and give the dripper a gentle shake so the bed is flat. Make a small divot in the center.

    Bloomat 0:00

    Start the timer and pour 45 g of water, saturating all the grounds. Swirl gently. Let it bloom for 45 seconds while CO₂ escapes.

    First main pourat 0:45

    Pour steadily in slow spirals to 180 g, avoiding the paper walls. Aim to finish by 1:15.

    Second main pourat 1:30

    At 1:30, pour to 300 g in the center with a gentle, consistent stream.

  6. 6

    Swirl and draw downat 2:00

    Give the dripper one gentle swirl to flatten the bed. Let it drain completely — the drawdown should finish around 2:45 to 3:15.

Troubleshooting

Sour, thin or salty
Under-extracted. Grind finer, use hotter water, or extend the bloom to 60 seconds.
Bitter, dry or hollow
Over-extracted. Grind coarser or reduce agitation during pours.
Drawdown stalls past 4:00
Too many fines or too fine a grind. Go coarser and pour more gently.
